Confetti Meatloaf

1 1/2 pds of lean ground beef
5 oz of spinach, finely chopped
2 carrot grated
1 T Worcestershire sauce
1 egg beaten
3/4 c tomato juice
1/4 C fresh Parmesan cheese, grated
1/4 bread crumb
1/4 onion, finely chopped
1/4 salt
1/4 teaspoon pepper
1/4 c ketchup
 
Preheat oven to 350
In a small bowl, combine 1/4 cup of tomato juice and ketchup, set aside
In a second bowl combine all other ingredients and mix well.  Form into a loaf and place in a 1 quart loaf pan or miniature loaf pan.
 
Bake in oven for 50 to 55 mins or until center of meat reaches 160 on a meat thermometer.
Or if making miniature loaf test after 20 mins and if not done cook another 10 mins.
Top with reserve juice and tomato mixture during last 5 mins of cooking
